12 days to change the way you cook, eat and think about food.

 

LifeCOOK is our hands-on cooking intensive for anyone ready to become more capable and confident in the kitchen while discovering a different way to think about food.

​

Learn the fundamentals, cook everyday meals, shop for good ingredients and discover how to make something from what you have. Along the way, experience the French approach to food: shop locally, cook with the seasons, use what you buy, waste less and make time to enjoy food with others.

​

This isn't culinary school or a course in French cuisine: it's cooking for life, inspired by a culture that has made food part of the art of living well.

A different way to think about food

In France, food is about much more than what's on the plate.

​

LifeCOOK draws on three simple ideas that are deeply rooted in French food culture:

​

Respect the food. Choose good ingredients, cook with the seasons, use what you buy and waste as little as possible.

​

Stay close to the source. Know where your food comes from. Shop at markets, buy from producers and discover the people, places and traditions behind what you eat.

​

Make time for the meal. Cook for other people, sit down together and take time to enjoy what you've made.

​

In 2010, UNESCO recognized the "gastronomic meal of the French" as part of the Intangible Cultural Heritage of Humanity. This recognition isn't about French cuisine itself, but the traditions surrounding the meal: the pleasure of good food, the care taken in preparing and serving it, and above all, bringing people together around the table.​

​

These ideas are at the heart of LifeCOOK. They shape what we cook, where we shop, the people we meet and the way we gather around the table each day.

This program is open to all, from confident cooks to complete beginners.

Language Requirements

None. The program is taught entirely in English.​​​​​​​​​​​​​​​​​​​​

In the kitchen

Learn the fundamentals, then put them to work.

 

Learn to use a knife properly, control heat, season and taste as you go, understand timing and build flavour. Make the kind of food you'll actually want to cook again, from omelettes, roast chicken and pasta to soups, sauces, bread and simple desserts.

​

Each day builds on what you've already learned, showing you how the same techniques can work across different dishes. As your confidence grows, you'll rely less on recipes and more on your own judgement.

​

Sometimes you'll have a recipe to follow. Other times you'll have a handful of ingredients, a budget or yesterday's leftovers and have to decide what happens next.

Beyond the kitchen

Discover where good food begins.

​

Head to a French market and see what's in season. Meet a butcher. Taste oysters beside the sea. Visit a cider producer and sample cider in the orchard. Discover the place of the boulangerie in everyday French life.

​

Normandy becomes part of the classroom as you explore a region shaped by farming, fishing and some of France's great food traditions. You'll see how local ingredients are grown, made and sold, and meet people whose knowledge has been passed down through generations.

​

There'll be long lunches, food tastings and plenty of opportunities to try something new. Then bring what you've discovered back to La Vaquerie and into the kitchen.

Learning about breadmaking techniques

Life at La Vaquerie

Spend time on our 400-year-old farm in the Normandy countryside.

​

La Vaquerie is your home base for LifeCOOK, with the kitchen, gardens and surrounding countryside becoming part of everyday life. You'll have your own student house to share, with space to settle in and make yourself at home.

​

Between cooking and exploring Normandy, there's downtime too: take a bike out, go for a walk, hang out with the group or simply enjoy having nowhere else you need to be.

A skill for life

Wherever you go next, you'll know how to cook for yourself and others. 

​

Twelve days gives you time to learn the fundamentals and begin trusting your own judgement in the kitchen. You'll leave with a better understanding of ingredients, techniques and flavours, and the confidence to make decisions without always relying on a recipe.

​

You'll also learn how to shop well, choose ingredients, understand where your food comes from, plan meals, cook within a budget, use what you have and waste less. Together, these skills build practical food literacy, the knowledge and confidence to make good decisions about food in everyday life.

​

ifeCOOK is a starting point. You'll go home a better, more independent cook, with an appreciation for good food, the pleasure of making it and the habit of sharing it with others.
